Strawberry Rhubarb Chia Seed Drink

This strawberry rhubarb chia seed drink calls for less than ten ingredients and minimal cooking but is still refreshing, filling and flavourful AF.
Ingredients
For the chia seeds in water:
  • ½ cup chia seeds
  • 2 cups warm filtered water
For the strawberry rhubarb juice
  • 2 cups rhubarb, trimmed and cut into small pieces
  • 3 cups water
  • ¾ cup agave, more or less to taste
  • pinch of salt
  • ½ tsp vanilla, optional
  • zest of one lime
  • 1 cup sliced strawberries
  • ¾ cup freshly squeezed lime juice, more or less to taste
For the strawberry rhubarb chia seed drink:
  • extra strawbs and lime zest for garnish, optional
Instructions
For the chia seeds in water:
  1. Mix together the chia seeds and warm water in a large bowl or jug and refrigerate overnight or for at least 4 - 5 hours
For the strawberry rhubarb juice
  1. Combine rhubarb, water, agave, salt, vanilla and zest in a medium saucepan and bring to a boil
  2. Reduce heat and simmer until the rhubarb starts to break down and the water begins to turn pink, about 8 - 10 minutes
  3. Add the sliced strawberries and return the mixture to a boil
  4. Reduce heat and simmer for another 2 - 3 minutes
  5. Remove from heat, add the freshly squeezed lime juice and allow to cool slightly
  6. Strain the mixture using a fine mesh strainer, pressing down on the fruit to squeeze out all the liquid
  7. Allow to cool
For the strawberry rhubarb chia seed drink
  1. Add the juice to the chia seeds and mix well, being sure to break up any clumps of chia seeds
  2. Refrigerate until ready to serve
  3. Serve cold and garnish with extra strawberries and lime zest if desired
