Vegan Spiced Spelt Flour Cookies

These easy-to-make vegan spiced spelt flour cookies are soft, chewy and perfectly sweet.
Ingredients
  • ½ tbsp ground flax + 1½ tbsp water
  • ¼ cup + 2 tbsp (6 tbsp) coconut oil, softened but not liquid
  • ½ cup coconut sugar
  • 2 tbsp molasses
  • Optional: ½ tsp white rum
  • 1⅓ cup spelt flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp clove
  • ¼ tsp nutmeg
  • ¼ tsp salt
Instructions
  1. In a small bowl, combine flax and water and let sit for a few minutes
  2. Preheat oven to 325F, line a baking sheet with parchment paper and set aside
  3. Add the softened coconut oil to a large bowl and beat until light and fluffy
  4. Beat in the flax egg, coconut sugar and molasses until well combined
  5. In a medium bowl, whisk together the spelt flour, baking soda, spices and salt
  6. Add the dry ingredients to the wet ingredients and mix until just incorporated
  7. Scoop out rounded 1 tbsp balls of dough and transfer to prepared baking sheet
  8. Bake for 10 - 12 minutes, being careful not to over bake, then transfer to a wire rack to cool
  9. Best when served fresh but will keep for a few days in an airtight container
