Vegan Spiced Spelt Flour Cookies

- ½ tbsp ground flax + 1½ tbsp water
- ¼ cup + 2 tbsp (6 tbsp) coconut oil, softened but not liquid
- ½ cup coconut sugar
- 2 tbsp molasses
- Optional: ½ tsp white rum
- 1⅓ cup spelt flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp allspice
- ¼ tsp clove
- ¼ tsp nutmeg
- ¼ tsp salt
- In a small bowl, combine flax and water and let sit for a few minutes
- Preheat oven to 325F, line a baking sheet with parchment paper and set aside
- Add the softened coconut oil to a large bowl and beat until light and fluffy
- Beat in the flax egg, coconut sugar and molasses until well combined
- In a medium bowl, whisk together the spelt flour, baking soda, spices and salt
- Add the dry ingredients to the wet ingredients and mix until just incorporated
- Scoop out rounded 1 tbsp balls of dough and transfer to prepared baking sheet
- Bake for 10 - 12 minutes, being careful not to over bake, then transfer to a wire rack to cool
- Best when served fresh but will keep for a few days in an airtight container
