Rich, creamy and coconut-y, this concoction is not your ordinary bowl of oats. It's not as healthy as most oatmeal recipes, but man oh man does it satisfy that morning sweet tooth without the guilt. Next time you wake up craving a box of cookies, take 5 minutes and whip this up instead!
Ingredients
½ cup water
½ cup almond milk
½ cup rolled oats
1tsp coconut oil*
Pinch of salt
2 tsp maple syrup**
½ tsp vanilla
1 tbsp unsweetened coconut flakes
1 tbsp chopped walnuts (optional)
½ tbsp semi sweet chocolate chips (optional)
½ tbsp peanut butter chips (optional)
Instructions
Combine oats, water, milk, coconut oil, salt and maple syrup in a small non-stick pot
Bring the mixture to boil over medium heat then reduce heat and allow to simmer for 3-5 minutes, stirring occasionally
Remove from heat and stir in vanilla
Add desired toppings and devour
Notes
*Can substitute with butter. Leave of the salt if using salted butter. **Can use equal parts brown sugar instead
