Flourless, Vegan Two Bite Brownies

- ½ cup natural peanut butter
- 1 flax egg (1 tbsp ground flax + 3 tbsp water)*
- ¼ cup maple syrup
- ⅛ cup unsweetened cocoa powder
- ¼ tsp baking soda
- ⅛ cup peanut butter chips
- ⅛ cup chocolate chips
- Preheat oven to 350 degrees.
- In a small bowl, combine ground flax and water and set aside for 5 minutes
- In a medium bowl, whisk together first 5 ingredients, on at a time, in the order listed.
- Fold in peanut butter and chocolate chips
- Fill each cup of a greased, mini-muffin tin with equal amounts of batter
- Bake for 15-20 minutes or until a toothpick inserted into the brownie comes out clean
- Let sit for 5 minutes in the pan before removing and cool completely on a wire rack
*If not vegan, replace with one egg white
