Dairy-Free Inside Out Loaded Potato Poppers

These Dairy-Free Inside Out Loaded Potatoes are crunchy on the outside, creamy on the inside with a little spiciness from the 'cheese' sauce topping. Perfect for last minute dinners and potlucks.
Ingredients
  • 12 creamer potatoes - I used a mix of The Little Potato Company's Something Blue and Fingerlings)
  • 12 slices of turkey bacon
  • For the Dairy-Free 'Cheese' Sauce:
  • 1 cup unsweetened almond milk
  • ¼ cup nutritional yeast
  • 2 tbsp whole wheat flour
  • 1 tsp prepared mustard
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • ¼ tsp crushed red pepper
  • ¼ tsp ground cumin
  • Optional Toppings: salsa, diced jalapeƱos and chives
Instructions
  1. Preheat oven to 350F. Line a baking tray with parchment paper and set aside
  2. Wrap each creamer potato with a slice of turkey bacon, using a toothpick to hold it all together
  3. Place the bacon wrapped potatoes on the baking sheet and bake for 30-40 minutes or until the potatoes are easily pierced with a toothpick
  4. While the potatoes are in the oven, whisk together the 'cheese' sauce ingredients in a small sauce pan
  5. Bring the mixture to a boil and continue whisking until it thickens
  6. Remove the potatoes from the oven and top with 'cheese' sauce, diced jalapeƱos, chives and salsa
  7. Use any extra 'cheese' sauce for dipping
