Coconut Mocha Cashew Butter

- 2 cups cashews
- ¾ cup shredded coconut
- 2 tbsp chocolate chips
- 1 tbsp coffee grounds
- 1 tbsp cocoa powder
- 1 tbsp coconut oil, melted
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ tsp vanilla extract
- ¼ tsp coconut extract
- 2 tbsp maple syrup
- If your cashews are not pre-roasted, preheat oven to 350F and roast in an unlined baking sheet for 10 minutes
- Add cashews and coconut to food processor and process until a mealy consistency is reached
- Add coffee, cocoa powder, cinnamon and salt and process until smooth (5 - 10 mins)
- Add in maple syrup chocolate chips, extracts and coconut oil and process until smooth and creamy.
