This green smoothie vegan french toast is crispy on the outside, tender on the inside and filled with delicious banana green smoothie flavour.
Ingredients
1 ripe banana
½ cup spinach
1 cup almond milk + more if needed
1 tsp chia seeds
3 tsp flax seeds
a pinch of salt
1 tsp cinnamon
1 tsp vanilla extract
7 - 8 thick slices of day-old bread*
coconut oil for cooking
Toppings: maple syrup, sliced bananas, peanut butter drizzle etc.
Instructions
Add the banana, spinach, milk, chia seeds and 1 tsp flax seeds to a blend and blend until smooth
Pour the mixture into a shallow bowl and whisk in remaining flax seeds, salt, cinnamon and vanilla
Set the mixture aside for about 5 minutes until it thickens slightly. If it is too thick add more milk if it is too thin, let it sit for a little longer so the flax and chia seeds can do their work.
Once the mixture is thick enough, heat your skillet or griddle and coat with coconut oil
Dip your bread into the batter, letting it soak for about 5 seconds on each side. *Soak for less time if you are using thinly sliced and/or fresh bread.
Transfer to the hot skillet or griddle and cook for 3-4 minutes on each side over medium heat, turning carefully since the mixture may stick to the pan. Lower heat if the bread is burning or browning too quickly
Serve immediately with desired toppings
Notes
The batter will keep in the fridge overnight, but it will thicken considerably so you will need to add more milk before using again. Any bread will work as long as it isn't fresh out the oven and can hold up to being dunked/soaked in liquid
