Easy Vegan Drop Biscuits

These easy vegan drop biscuits are light, soft and fluffy and only require 6 ingredients and 20 minutes, total. Perfect for those busy weekday mornings.
Ingredients
  • ½ cup almond milk + 1 tbsp apple cider vinegar
  • 1¼ cups white spelt flour
  • 5 tsp baking powder
  • ½ tsp salt
  • 1 tsp coconut sugar
  • ¼ cup coconut oil (2 tbsp melted, 2 tbsp cold)
  • Optional mix-ins: chocolate chips, fresh berries, herbs & nutritional yeast
  • Optional toppings: jam, gravy, vegan butter, vegan cheese
Instructions
  1. Preheat oven to 425F and line a baking sheet with parchment paper and set aside
  2. In a small bowl, whisk together the almond milk and apple cider vinegar and set aside
  3. In a large bowl, whisk together the spelt flour, baking powder, salt and coconut sugar
  4. Cut the solid coconut oil into the flour mixture using a pastry cutter, fork or your fingertips, until the mixture is crumbly and no large chunks of coconut oil remain
  5. Pour in the melted coconut oil along with the milk and apple cider vinegar mixture and stir until just combined. If you're using any mix-ins, fold them in now
  6. Spoon the dough onto the baking sheet and bake for 10-12 minutes or until the tops are just starting to brown
  7. Serve warm with toppings of choice
