These dirty chai sweet rolls are a little spicy, thanks to the chai and not overly sweet since most of the sugar comes from the jam.
Ingredients
1½ cups light spelt flour, plus more for rolling
1 12 tsp baking powder
a pinch of salt
1 tsp chai spice*
1 tbsp coconut sugar
½ cup almond milk
1 tbsp apple cider vinegar
¼ cup strongly brewed coffee
½ cup elderberry jam
Instructions
Preheat oven to 375F, spray a muffin tin with cooking spray and set aside
In a small bowl, combine almond milk and ACV and set aside
In a medium bowl, whisk together flour, baking powder, salt, sugar and chai
Add the coffee to the milk mixture then stir into the dry ingredients until a soft dough is formed
Transfer the dough to a floured surface and roll out into a rectangle
Spread the jam evenly around the dough and roll into a long log. This will get messy and the jam will leak out
Slice the log into 6 - 7 pieces and transfer to the prepared muffin tin
Top sweet rolls with any leftover jam that leaked out while rolling
Bake for 14 - 16 minutes or until the rolls start to turn golden brown. Do not over bake
Notes
*If making your own spice, combine 1 tsp ground cardamom, ½ tsp ground star anise, 2 tsp ground cinnamon, 1 tsp ground cloves, 3 tsp ground ginger and ½ tsp ground peppercorn and use 1 tsp of this mixture
