No Yeast Elderberry Dirty Chai Sweet Rolls

These dirty chai sweet rolls are a little spicy, thanks to the chai and not overly sweet since most of the sugar comes from the jam.
Ingredients
  • 1½ cups light spelt flour, plus more for rolling
  • 1 12 tsp baking powder
  • a pinch of salt
  • 1 tsp chai spice*
  • 1 tbsp coconut sugar
  • ½ cup almond milk
  • 1 tbsp apple cider vinegar
  • ¼ cup strongly brewed coffee
  • ½ cup elderberry jam
Instructions
  1. Preheat oven to 375F, spray a muffin tin with cooking spray and set aside
  2. In a small bowl, combine almond milk and ACV and set aside
  3. In a medium bowl, whisk together flour, baking powder, salt, sugar and chai
  4. Add the coffee to the milk mixture then stir into the dry ingredients until a soft dough is formed
  5. Transfer the dough to a floured surface and roll out into a rectangle
  6. Spread the jam evenly around the dough and roll into a long log. This will get messy and the jam will leak out
  7. Slice the log into 6 - 7 pieces and transfer to the prepared muffin tin
  8. Top sweet rolls with any leftover jam that leaked out while rolling
  9. Bake for 14 - 16 minutes or until the rolls start to turn golden brown. Do not over bake
Notes
*If making your own spice, combine 1 tsp ground cardamom, ½ tsp ground star anise, 2 tsp ground cinnamon, 1 tsp ground cloves, 3 tsp ground ginger and ½ tsp ground peppercorn and use 1 tsp of this mixture
