Beets & Veggie Smoothie Bowl

Hey There Friends! How’s it goin?

Today I tested out my creativity and tried to come up with cool ways to not eat meat.ย I’m going meatless today as part of the MoveNourishBelieve Challenge hosted by Fit Approach and Lorna Jane but I’m not really a salad person so a bowl of greens just wouldn’t cut it for me ๐Ÿ˜•

I’ve also been slacking in the veggie intake department recently so I decided to take the meatless challenge one step further and try to incorporate as many vegetables as possible into every meal ๐Ÿ˜€

I stocked up on the essentials over the weekend and also grabbed some beets along the way, which I added my post workout smoothie this morning. The final productย was chocked full of veggies but tasted awesome so I had to share ๐Ÿ˜€

Beets & Veggie Smoothie Bowl

After my workout this morning I was super hungry and needed something in my belly FAST! My first thought was a smoothie so I started pulling out the usual ingredients for a green smoothie. I alsoย spied the beets hiding in the back so I decided to add those too and make a red smoothie instead ๐Ÿ˜€

Then I thought of the sad carrot I had in the crisper and rationalized that if carrots and beets went well together when juicing, they should work in a smoothie…so I grabbed that too.

I added everything to my large NutriBullet cup and narrowly avoided going over the ‘MAX’ line. I also threw in some oats and a scoop of chocolate protein powder at the last minute. I usually don’t use the chocolate flavour in my smoothies but the beets just called for it (red velvet anyone? ๐Ÿ˜‰ ) so I made an exception this morning ๐Ÿ˜†

Once everything was nice and smooth I poured it into a bowl, topped it with some homemade granola I made last night and dug in…YUM! ๐Ÿ˜€

A great way to hide veggies in your morning smoothie...and the awesome red colour doesn't hurt ๐Ÿ˜€

Ingredients
  • 1 medium banana
  • 1 generous handful spinach, kale or combo of greens
  • ½ cup frozen berries
  • ½ cup frozen mangoes and pineapple
  • ½ beetroot, chopped*
  • 1 carrot, chopped
  • ½ - 1 cup almond milk**
  • ¼ cup rolled oats
  • 1 scoop chocolate whey protein powder
  • 1 dash cinnamon (optional)
  • ice
Instructions
  1. Add all ingredients to a blender and blend until desired consistency is achieved.
Notes
* If you do not have a high speed blender, you may need to use roasted beets
**Add more or less milk as needed

    Oooh this looks gorgeous! I have a confession. I’ve never eaten a beet, to my knowledge. I bought two of them a couple of months ago and they went bad before I roasted them. I was scared of the beets. Something I need to work on apparently! I’ve gone meatless before and yesterday, I went veggie-less. Oops.
