15 Healthy Green Recipes for Lunch & Dinner that don’t use Lettuce

4 January, 2016 by Giselle Rochford 13 Comments

Happy New Year friends! I hope you all had an awesome holiday weekend. Mine was pretty quiet, filled with laughter and really, really good food. I would have loved to keep celebrating, but we’ve reached the first Monday of the year so it’s high time to get back to the real world. First up? green recipes for a healthy new year.

[Tweet “15 lettuce-free green recipes for a healthy lunch or dinner #healthyeating #eatyoveggies”]

As I mentioned in my last post, although my fitness over the last year left a lot to be desired, my eating habits were mostly good. That being said, I definitely indulged my sweet tooth this holiday. Big time. So my goal this week is to get back to mostly healthy eating with the occasional indulgence, instead of the other way around.

I’m pretty good at getting my veggies in with smoothies and other green breakfast recipes. But I’m not one to just sit around and eat veggies. So I enlisted the help of some of my favourite bloggers to find creative healthy green recipes that I’d actually enjoy. They definitely came through and today I want to share a few that I’m looking forward to trying.

Oh, hello. This is basically the best idea for a round-up ever. Like I love veggies but sometimes I just don’t want lettuce! Tonight all I had was arugula so I just had a ton of that… but wish I had one of these dinners instead!

Beautiful green recipes 🙂 I for one love lettuce and green leaves– but my husband likes his salad without the lettuce– so these are great for him!

If something tastes better than you expected, you could use the word wow to express your surprise. If you say something tastes amazing, you’re saying it tastes even better than great or really good.

LOVE this blog!! I’m so bad about getting my greens in, cuz I’m usually not crazy about salads 🙈 I love how these methods are so sneaky! Definitely giving some of them a try!
