I’m pretty sure I’ve mentioned before that I’m not a huge fan of salads. I like vegetables well enough, but there’s just something about eating a bowl of lettuce or spinach that doesn’t usually appeal to me. Recently I’ve actually been craving salads a bit more, but generally speaking, getting enough vegetables in my diet isn’t exactly easy.

Wanna know something I do love? Baked goods and sweets in general. My love of baked goods have been known to get out of hand, especially in the fall and winter, when all I want to do is bake. At this time of year salads are literally the last things on my mind. But, since (wo)man cannot live on bread alone – or so my mother told me – I try to add as many fruits and veggies into my baked goods as I can. It’s all about compromise, right?

While I don’t usually worry about getting my veggies in my baked goods, I have made a yummy zucchini apple bread (with extra protein!). These recipes do sound delicious though. It would be good for my husband, who, even though he’s a vegetarian, really doesn’t like vegetables all that much 🙂

Some days I eat a garden’s worth of produce and others I don’t see anything green all day. I just try to eat more raw greens if I haven’t had any in a while 🙂 But I do love using up almost bad produce in baked goods like this!!
