Tropical Avocado Popsicles

I did something totally crazy this weekend and planned, tested and shot all of my recipes for the upcoming week. Spoiler alert: prepare yourself lotsa green goodies, starting with these tropical fruit avocado popsicles.

Can we have a moment of silence for the abundance of fresh fruit available at this time of year? And another for how cheap it all is? I picked up 8 avocados for less than 10 bucks at the grocery last week which is insaneeee. And I know they would have been even cheaper at the farmers’ market.

The only downside to this epic AF pricing is my tendency to go a bit overboard. I mean 8 avocados? What the eff do I need with 8 avocados? Especially when they’ll all invariably ripen at exactly the same time.

Well, to be honest, I had no idea when I bought them but the price was just too good to refuse. Obviously.

Luckily, there’s no shortage of avocado recipes hurtling around my brain at any point in time. So I decided to give a few of them a go this week including these tropical avocado popsicles for #IceCreamSundays.

Tropical Avocado Popsicles

Like most popsicles these avocado popsicles are pretty easy to make. All you need to do is blend your ingredients, pour into popsicle moulds, freeze and devour.

These popsicles are pretty forgiving and can be customized to suit your tastes, which is always good. To add the tropical fruit twist to my avocado popsicles I went with fresh pineapple, mango and kiwi. But peaches and nectaries would probably work really well here. Just be sure that all of your fruit is ripe and sweet.

I also originally tried these with coconut milk in place of coconut water but they were a little too rich and creamy for me. I much prefer icy popsicles. But feel free to use light coconut milk in place of the coconut water if you prefer.

And that’s it. Just a handful of ingredients and no added sugar and you can be cooling down this summer with these tropical avocado popsicles. Whether you live in the tropics or not.

These tropical avocado popsicles are easy to make, only require a handful of ingredients and are free of refined sugars. Perfect for cooling down on warm summer days.

Serves: 6
Ingredients
  • 1 small avocado
  • 1 cup chopped pineapple
  • 1 cup chopped mango
  • 1 kiwi chopped
  • 1 cup coconut water
Optional:
  • 1 - 2 tbsp agave
  • Nutiva Organic Coconut Manna for drizzling
Instructions
  1. Add all ingredients to a blender and blend until smooth. Taste and adjust sweetness to suit
  2. Pour liquid into a popsicle molds, cover and insert craft sticks. I used two sticks per popicle but 1 is fine
  3. Freeze popsicles overnight or for at least 4 - 6 hours
  4. Run the molds under hot water before trying to remove the popsicles
  5. Drizzle with coconut butter if desired
  6. Store any leftovers in the freezer

    Yes, yes, yes! One of our favorite smoothie bowl flavors! We are so late to the game with popsicles this year, last year at this point we had been making them daily! This year well we still have the original batch in the popsicle maker, fail! Now that we are back in town we have to whip some up while it’s still summer!
