Mine started off pretty great with a Semi Formal for the Association of Caribbean Students here at Waterloo, on Friday night. Then it took a turn for the worse with a mystery illness on Saturday morning and a slip on an icy sidewalk on Sunday night 🙁 [Damn you snow! :oops:]
But I’m alive and well and ready to share one of my favourite go-to-recipes with you:
Homemade Healthy Granola
Granola is one of my all-time favourite snacks (and occasionally breakfast, lunch and dinner ;)).
There was actually a time when I lived off granola and granola bars. But then I started cleaning up my diet I had to cut it out because most of the store bought granola out there isn’t exactly healthy.
I definitely missed it though and I tried to find some healthy granola to replace it. The best contenders were Love Grown Foods’ Oat Clusters (my fav was the cocoa goodness :)).
That got super expensive, super fast though, so a couple months ago I set out to make simple, homemade healthy granola and it was a success :D!
Once I started making my own granola I had no idea why I didn’t make it before. It’s really easy and I usually have all the ingredients on hand whenever I want to make it – except the applesause…I go through that stuff wayyyy too quickly!
Another thing I love about this healthy granola recipe is how customizable it is. I’ve made it with blueberry puree instead of applesauce, pumpkin spice instead of just cinnamon, almonds, walnuts or almonds AND walnuts, I’ve even made it with NUTELLA! <- less healthy but oh so yummy ;)…the possibilities are endless!
I generally use only rolled oats when making the granola because it’s all I have, but I’ve been meaning to try adding other grains like barley or rye. I’m just not sure where to find flaked barley :?…
Anyway, onto the recipe!
- 3 cups rolled oats
- ½ cup chopped nuts
- ½ seeds (e.g. pumpkin & sunflower seeds)
- 3 tsp cinnamon
- ½ cup unsweetened apple sauce*
- ⅓ cup honey
- Preheat oven to 300C
- Add oats, nuts and seeds to a large mixing bowl
- Whisk together wet ingredients in a small bowl
- Pour wet ingredients over dry and mix well. Don't worry, there's enough of the liquid mixture to coat everything!
- Once everything's combined, spread evenly over a lined baking sheet
- Bake for 45-50 mins or until golden brown, stirring every 10 mins to avoid burning
One last thing to note when making this is how easy it is to burn the oats and nuts. The first couple times I attempted it I turned the granola every 20mins or so and it was super crunchy (by crunchy I mean burned lol) by the time I took it out of the oven.
So be extra vigilant with this one!
