Hey Friends! How’s it goin?

This weekend I’m going to a potluck and I’m still not sure what to take. Usually, when I go to potlucks, I carry some variation of these flourless, vegan brownie bites. But, I’ve been making those brownies for years and as much as I love them – they’re my absolute favourite – I’m thinking it’s time to try something new. These Apple Cinnamon Roasted Cashews were attempt number 1 at a new signature potluck dish.

These apple cinnamon roasted cashews are crunchy and slightly sweet and manage to combine the sweetness of apples and the spiciness of cinnamon, without overpowering the taste of the cashews. Plus, they contain way less refined sugars than store bought honey roasted or other flavoured cashews would. However, before I’d even put them in the oven I realised that roasted cashews aren’t exactly potluck material.

The potluck I’m going to on Saturday is happening a little after noon so it’s more of a lunch thing than a snack thing. So I need something hearty like potato salad, or a meat dish or yes, a dessert like brownies. These apple cinnamon roasted cashews are great but they’d probably be better for a pool party or a baby shower or something. You know, an event that encourages snacking.

So, I guess it’s back to the drawing board for me. Bummer. And to make matters worse, I’ve hit writer’s block hard. Right in the middle of this post. I spent most of yesterday writing another post before attempting this one and I think my creativity well was running low. I tried re-reading the post I wrote last year on overcoming writer’s blogger’s block, but it wasn’t really relevant in this case. Note to self: update that post with tips on how to write about a specific recipe when your brain isn’t cooperating.

Until then, hows about we just look at the pretty pictures while I snack on these cashews and try to come up with another idea for the potluck?

These apple cinnamon roasted cashews are crunchy and slightly sweet and are the perfect combination of the apples and cinnamon, without overpowering the taste of the cashews. Plus, they only call for 6 ingredients and 10 minutes in the oven.

Recipe type: Snack
Ingredients
  • 2 cups raw cashews
  • 2½ tbsp apple sauce
  • 1 tsp ground cinnamon
  • ½ tsp pumpkin spice
  • 2 tsp coconut sugar
  • pinch of salt
Instructions
  1. Preheat oven to 350F, line a baking sheet with parchment paper and set aside
  2. In a small bowl, mix together the cinnamon, pumpkin spice, salt and coconut sugar
  3. In a medium sized bowl, combined the cashews, apple sauce and ½ the cinnamon mixture, stirring until everything is coated
  4. Spread the coated cashews out onto the baking sheet and bake for 10 minutes
  5. Remove from oven and sprinkle with remaining cinnamon mixture
  6. Allow to cool fully before serving, so the cashews have time to become crunchy

    I can’t do cashews (allergies!), but I’d LOVE to try this with almonds. I’m obsessed with the fact that you used applesauce in these — definitely never would have thought of that one! And good luck with the writer’s block… that’s always a pain in the butt to have to deal with.
