I always think of the slow cooker as something that should be used exclusively in the colder months, so I feel a little silly writing writing this post while basically melting from the heat. But, in my defence, when I pulled my Crock Pot out of hibernation last weekend to make this Slow-Cooked Coconut Raisin Rice Pudding, I was certain we’d seen the last of summer.
I can count on one hand the number of times I used my slow cooker last fall and winter. I made a huge fuss about wanting one for so long, and when I finally got it, I had no idea what to make with it. Because of that, one of my foodie resolutions for this season was to use my Crock Pot as much as possible. So, when Ricardo Cuisine reached out to me about the Slow Cooker Favourites cookbook, I knew it was fated.

The cookbook features more than 65 slow-cooker recipes for busy people, vegetarians, meat lovers and even people who love their sweet treats – like myself. I’d never thought to make something sweet in the slow cooker before, so I was really intrigued by that last one.

I had to make a few changes to the recipe to for it to be dairy free, but it was definitely a success in my mouth eyes. This Vegan Slow-Cooked Coconut Raisin Rice Pudding is creamy, full of flavour without being overpoweringly sweet, and tastes just as good eaten warm or cold. I seriously cannot wait to try some of Ricardo’s other slow cooker recipes.
- 1 cup short-grain rice (I used arborio)
- ⅓ cup raisins
- 1 cup full fat coconut milk/cream
- 4 cups dairy free milk (I used a mix of boxed almond and coconut milks)
- a pinch of salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ⅓ cup coconut palm sugar
- ½ tsp vanilla extract
- ½ tsp coconut extract
- Add all ingredients except sugar and extracts to the slow cooker and stir
- Cover and cook on high heat for 2 hours
- Add the coconut palm sugar and vanilla and coconut extracts and stir until the sugar dissolves
- Serve warm or cover and chill for later

Also, 2 hours in a crock pot on high to cook 1 cup of rice in 5 cups liquid is impossibly short.
I tried the recipe as stated and when I discovered my large pot of soup with a small litter of relatively hard rice in the bottom I reviewed the recipe and it’s clearly bogus…
Honestly I haven’t pulled out my slow cooker for years. Sometimes I forget that I have one! I really should do something about that. I’ve never made rice pudding before. It sounds delicious!

Yay! My favorite thing is to cook grains (mostly rice) in coconut milk! So good! I finally made something sweet in my slow cooker just 2 weeks ago for the first time 😉 Besides that, it’s always chicken…not even soup!

Neither slow cookers nor crockpots are a thing over here so I’m always a little envious when people talk about recipes using them. The concept seems really neat.
Rice pudding, however, is definitely known here and a childhood favourite. We usually had the basic version topped with cinnamon sugar but I like all the spices in this recipe!

I use my slow cooker year round! When it’s hot, I don’t use it for stews or soups, but I do use it to cook dried beans or pulled meats for salads. It’s a great tool for when I don’t want to heat up the kitchen. Rice pudding always makes me think of colder months though, and this recipe sounds perfect!

Rice pudding always reminds me of my grandmother. She used to make quite a few of these in her day! I love the idea of making this in the slow cooker, much more doable for me! Thank you for sharing your recipe.
This looks delicious! I love rice pudding, but I have a dairy allergy and cannot eat traditional rice pudding without getting sick. I like the idea of adding in raisins too. Pinning for later.
