As I dive deeper into meatless eating, I’m discovering that salads and smoothies are staples in every healthy vegan diet. And with spring here and summer fast approaching, those two things will be popping up more and more. Now, we all know that I’m a huge lover of smoothies but, despite my best efforts, I actually can’t survive on them alone. And I’m only just learning to like salads. So, I decided to do something a little radical and try to find vegan spring recipes that weren’t salads or smoothies.

Spring food is usually synonymous with anything light and healthy that helps you prep for your summer bod. So I thought it would be challenging to find vegan spring recipes that weren’t salads or smoothies since they fit they’re the ultimate spring foods. Luckily, my blogging friends didn’t disappoint and I was able to roundup quite a few to share with you.

Aside: I also wanted to note, a couple of these recipes aren’t completely vegan as written, but with a few minor adjustments, they can easily be made vegan. I’ve highlighted the vegan-friendly recipes with [VF] so you won’t be surprised when you click through.

    This is such a smart idea! As a person who doesn’t eat meat, i find what i eat sometimes restrictive and almost always resort to salads and soups for lunches. As a vegan it must be so much harder. Thanks for sharing these different recipes!

    First of all, I love how creatively you titled this. Hehe, it made me smile when you said ‘that aren’t salads.’ Even though I’m not vegan, I love that you made this round-up, and I can’t wait to try some of the recipes, Lord willing! This dispels any doubt that vegan diets can’t have a good deal of colorful, delicious variety. I do love salads, and I do sometimes like doing smoothies, but I’m also a carb-loving girl too, so the carb recipes do sound tasty. 🙂

    I love this roundup, Giselle!! You’re right – when I tell people I’m vegetarian, they always joke that I just eat lettuce for lunch. No no nope! And springtime is such a wonderful time for produce, too! Thanks for including my Lemon Chia Seed Granola!
