Gingerbread Glazed Roasted Nuts

Hey Friends! How’s it goin?

On Monday, I was craving the spiced gingery goodness that is gingerbread men but didn’t want to do the whole flour, knead, refrigerate, roll etc. thing to make them. So, I decided to improvise and the result was these Gingerbread Glazed Roasted Nuts.

I haven’t always been a fan of gingerbread but a couple weeks ago my roommates and I made and decorated gingerbread men. Okay, that’s a lie; they made and decorated them while I watched and devoured. That experience changed me, because now I can’t get enough of the ginger/molasses combo.

I’d originally planned to make granola using one of the many gingerbread granola recipes that have been floating around the interwebs lately, but I discovered that I had no rolled oats. I had quick cooking oats, steel cut oats and oat flour, but no large flake rolled oats. Blasphemy, I know, but I rectified that on Tuesday with a quick trip to Ayres.

Anyway, I didn’t let my lack of oats stifle my creative genius (read: I was still craving gingerbread and nothing else would do) so I went ahead and made granola…without granola.

I whipped up the gingerbread glazed, poured it over the nuts, spread them in a baking sheet and tossed them in the oven for 10 minutes. This literally took 15 minutes from start to finish and the only hard part was controlling myself while the scent of gingerbread taunted me from the oven.

Actually, these were almost just gingerbread glazed nuts, because they tasted pretty good just mixed with the glaze. But after they came out the oven and I tasted one, I was so glad I decided to suffer through those 10 minutes. The nuts got a little extra crunch and the flavours were richer after roasting- especially the pecans. And it all got even better after cooling.

These gingerbread glazed roasted nuts are the perfect blend of the tartness of molasses, sweetness of maple syrup and the spiciness of ginger. It may be time for another mouth-gasm.

Now let’s talk about what to do with them. Sure, you can just eat them all but, like the peppermint covered chocolate pretzels, these would also make great gifts. My father can finish an entire tin of mixed nuts by himself so I’m positive he’ll prefer a batch of these to the lame ass wallet I usually end up getting him for Christmas.

And, if you triple the batch, you’ll have one for gifting, one for holiday guests and another to eat all by yourself. Can’t. Get. Enough.

These gingerbread glazed roasted nuts use the traditional sweet and spicy flavour of gingerbread to give a treat perfect for holiday parties or gifts

Ingredients
  • 1½ cups almonds
  • 1½ cupa pecans
  • 1 tsp coconut oil
  • 2 tbsp maple syrup
  • 2-3 tbsp molasses
  • ½ tsp ground cinnamon
  • 2 tsp ginger
Instructions
  1. Preheat oven to 350F. Line a baking sheet with parchment paper and set aside
  2. Add the nuts to a bowl and set aside
  3. In a small sauce pan, heat coconut oil, maple syrup, molasses and spices over low heat, until well combined
  4. Pour the glaze over the nuts and mix until evenly coated
  5. Spread the glazed nuts onto the lined baking sheet and bake for 10 minutes
  6. Remove from the oven and form or separate clusters as desired. Nuts will stick together when cooled
  7. Allow to cool completely before storing in an airtight containter

    I love the candied nuts. I always get them around the holidays but they are so darn expensive. This would be more economical. I love getting foodie gifts.
